What Ingredients Do I Need to Make Vegan Key Lime Pie from Scratch?


  • Limes - and lots of them! Fresh lemon and lime juice are so much more flavorful than processed store-bought. Besides, you need all that zest to top it off!
  • Coconut Nectar - is a vegan-friendly alternative to honey that's heated just enough to thicken it, so the process doesn't create lower levels of fructose.
  • Coconut Milk - this amazing ingredient will make this pie rich and creamy.
  • Cashews - these combine with coconut cream for incredible richness!
  • Lemon Extract - you can leave this out if you don't have it, but I recommend it to round out and boost the citrus flavor.

How to make organic Plant-Based Vegan Key Lime Pie

  1. Preheat oven to 350° and grease an 8-inch springform pan.
  2. Blend graham crackers, pecans, flaxseed, and shredded coconut in a food processor until crumbly.
  3. Add 1/4 melted coconut oil, then pulse until mixed.
  4. Press mixture into springform pan evenly to make crust.
  5. Bake 12-15 minutes until golden brown. Set aside to cool.
  6. Add all the filling ingredients into a blender. Blend until smooth, creamy, and thick.
  7. Pour evenly over cooled crust, then freeze for several hours. (Remove 30 minutes prior to thaw before serving.)
  8. For the homemade vegan whipped cream, while the pie is thawing, use a highspeed mixer with the whisk attachment to whip coconut cream, powdered sugar, and remaining 1/2 tsp of vanilla powder until peaks form. Refrigerate 5 minutes to set.
  9. Use an icing piping bag and decorative tip to apply dollops of whipped cream and slices of lime for a beautiful presentation. Enjoy your masterpiece!
