Baked Apple Cinnamon French Toast

Baked Apple Cinnamon French Toast

Yield: 6 servings
Author:
prep time: 10 minutes cook time: 30-35 minutes total time: 45 minutes

ingredients:

  • 6 slices of whole wheat bread
  • 2 large eggs
  • 1 cup almond milk (milk of your choice)
  • 1 thinly sliced apple
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon maple syrup (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon coconut oil or butter

instructions:

How to make Baked Apple Cinnamon French Toast

  1. Start by preheating your oven to 350°F.
  2. Prepare the Bread: Cut whole wheat bread into thick slices, typically about one inch thick. You may also use precut bread. Lightly toast the bread slices before, which will help the custard absorb better.
  3. Mix the Custard: In a large mixing bowl, whisk together eggs, almond milk, cinnamon, vanilla extract, nutmeg (if using), and salt. This mixture will soak into your bread and give it that rich French toast texture.
  4. Cut the Apples: Thinly slice the apples
  5. Assemble the French Toast: Grease a baking dish with coconut oil (or butter) and place the bread slices in it. If needed, overlap them slightly. Layer the thinly sliced apples over the bread slices, distributing them evenly.
  6. Pour the Custard: Pour the mixture evenly over the bread and apples, gently pressing the bread slices down with a fork to ensure they soak up the custard. Let it sit for about 5-10 minutes to allow the bread to absorb the liquid.
  7. Bake: Place the dish in the oven and bake for 30-35 minutes, or until the top of the bread is golden brown and the custard is set. The bread should be crispy on the top and soft inside, and the apples should be tender.
  8. When done, allow it to cool for a few minutes before slicing. Drizzle with a bit of maple syrup and sprinkle with extra cinnamon. You can also add protein yogurt or add a handful of walnuts or almonds. Enjoy!
