Monk Fruit sweetener is derived from the monk fruit. It tastes sweeter than table sugar, has no calories or carbs, and doesn't raise blood glucose levels. This recipe is very low in sugar, because of monk fruit sweetener instead of conventional table sugar.
Monk fruit is one of the only artificial sweeteners that doesn’t cause gastrointestinal stress and is safe for people with diabetes. Monk fruit is also sweeter than regular sugar so you still get the sweetness you are looking for.
You can also substitute monk fruit sweetener with coconut sugar or regular sugar if you are not worried about added sugar.
What is a Flax Egg?
Flax egg is an easy vegan substitute for eggs that is a 1:1 replacement. Mixing flax seeds in water and letting it sit will make a gel like consistency that is similar to an egg. Flax is high in fiber and omega-3’s which makes flaxseed a nutritional powerhouse.
